If you’ve been following Modern Honey, you know how much I love baking! Sometimes you just don’t want to go through the work of decorating and frosting a layer cake. A simple sheet is the answer! You can throw all the ingredients in a pan, cook it, glaze it and cut it into squares. It’s very easy!

The only downside to sheet cakes is that they don’t look as good as a layer cake because they’re usually served straight from the pan. How about inverting the cake sheet directly onto a serving platter? Then all you have to do is frost the cake and you have a simple and easy gourmet sheet cake to serve to friends and family.

This citrus cake combines all the flavors of fresh citrus – orange, lemon and lime – all in one cake. It’s sweet and tangy with a silky cream cheese frosting and topped with freshly sliced ​​citrus.

This sheet cake recipe is adaptable and you can make it an orange sheet cake recipe or a lemon sheet cake recipe if you want to simplify it. The icing is made with sweet cream butter, cream cheese, powdered sugar and citrus zest. You’ll want to eat the whole bowl of Citrus Cream Cheese Frosting!

What are the ingredients for citrus cake?

  • Oil
  • Sugar
  • Eggs
  • Buttermilk
  • Flour + baking powder + baking soda + salt
  • Fresh lemon juice
  • Orange zest + Lemon zest + Lime zest

CITRUS CREAM CHEESE GLAZE INGREDIENTS:

  • Butter
  • Cream cheese
  • Granulated sugar
  • Lemon Zest, Orange Zest, Lime Zest

How do I return a Sheet Cake?

If you want to flip a sheet of cake out of the pan, I would suggest lining the pan with parchment paper. Lightly spray the parchment paper with nonstick cooking spray which makes it easier to release the cake.

When the cake is baked, let it cool to room temperature. Once the cake has cooled, place a board or rack on top of the pan and invert it onto the board, dish or rack. Carefully remove the parchment paper from the cake. Frost the cake with the icing and decorate it. Cut into squares to serve.

What baking pans can I suggest using for sheet cakes?

I usually cooked with good quality aluminum pans. I find glass pans can be finicky and don’t cook evenly. I’ve been using USA brand baking pans for over 12 years and love the quality and durability. Click here for a 9 x 13 baking dish.

Ingredients

Citrus Cake Sheet:

  • 1 Chopped off Oil
  • 3 big Eggs
  • 1 ⅓ cups Buttermilk
  • 2 cups Sugar
  • 1 Teaspoon Lemon zest
  • 1 Teaspoon Orange zest
  • 1 teaspoon Lime zest
  • 1 Teaspoon Lemon juice
  • 2 cups Plain flour
  • 1 teaspoon baking powder
  • ½ teaspoon Baking soda
  • 1 teaspoon Salt

Citrus Cream Cheese Frosting:

  • ½ Chopped off Butter (softened)
  • (1) 8 oz package. Cream cheese (softened)
  • 5 cups Granulated sugar
  • Orange, Lemon, Lime Zest
  • Sliced ​​citrus (to place on top of the cake)

Instructions

  • Heat the oven to 350 degrees. In a large mixing bowl, cream together the oil, eggs, buttermilk, sugar, lemon zest, orange zest, lime zest and lemon juice. Mix for 2-3 minutes.

  • Stir in flour, baking powder, baking soda and salt.

  • Line a 9 x 13 aluminum pan with parchment paper. Spray with nonstick cooking spray. Pour the batter into a cake tin and spread evenly.

  • Bake 27 to 33 minutes or until toothpick comes out clean. Do not overcook. Let cool. Read the notes section for how to flip the cake.

Citrus Cream Cheese Frosting:

  • In a bowl, cream the butter and cream cheese together until light and fluffy, about 3-4 minutes. Scrape the sides of the bowl often.

  • Add powdered sugar. Stir in orange, lemon and lime zest or just garnish it on top. For more lemon flavor, add 2 teaspoons of lemon juice to the frosting.

  • If you wish to flip the cake, read the instructions below. Alternatively, frost the cake and top with citrus slices. Cut into squares and serve.
